Elderberry
Elderberry (Sambucus nigra) is a vigorous deciduous shrub producing large, flat-topped clusters of fragrant cream-white flowers in early summer, followed by heavy bunches of deep purple-black berries in autumn. Both the flowers and berries have a long tradition of culinary and medicinal use: the flowers are prized for elderflower cordial and fritters, while the berries are used for elderberry syrup, wine, juice, and preserves. The berries are high in iron and antioxidants and are commonly used as an immune booster. Growing to around 4 metres, it is a hardy, adaptable shrub that tolerates a wide range of soils. IMPORTANT: Sambucus nigra is classified as an environmental weed in New Zealand by the Department of Conservation and is listed among NZ's 386 environmental weeds. It spreads readily via bird-dispersed seeds and can form dense stands that displace native vegetation. Please only plant elderberry if you are committed to actively harvesting the flowers and berries before birds can access them, minimising seed spread. Do not plant near native bush, waterways or conservation areas. Raw berries should not be eaten in large quantities; cook before consuming.
